Observation: Accumulation of grease and food stains found on the walls in the back kitchen. This will attract pests and is a fire hazard. This was mentioned in the previous inspection.
Corrective Action(s): Immediately wash and scrub the walls to remove the grease and food stains. Use a degreaser to easily remove grease and food stains.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C; and thermometers present.
- High temperature dishwasher had a rinse cycle temperature of 72C at the plate's surfaces as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles and cloth buckets had [Cl2] over 200ppm.
- All foods stored in food grade container; covered; labelled; date coded; foods stored in groups with raw proteins below or separate from RTE foods; and all foods stored 6" off the floor.
- No expired foods in use or for sale.
- Valid FoodSafe certified staff present.
- General sanitation level is good, improvement needed in the mentioned areas.
- No signs of pests.
- Owner relocated portable, tabletop gas grills so they are found under the existing domestic exhaust hood.
- Owner has done research in resealing the cement floor and spoke to the landlord. The landlord is helping to find a contractor to complete the work. The owner indicated that epoxy paint will be used, but requires to be imported. Owner requested an extension to the completion date so a contractor and the product can be obtained. Agreed to extending the completion date to March 2024.
