-undercounter cooler 3 deg C

-High temperature washer 69.1 deg C first run, 73.7 deg C 2nd run at plate level
NOTE: in the mornings when not in use run a dry cycle to warm up washer

Chemical Controls:
-QUAT sanitizer dispenser/spray >200ppm

Wiping towels are single use then hampered

Daily tracking sheets maintained for fridges, and mechanical washer

General Sanitation
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests
