Observation: Protein items in prep/display cooler measured above 4 C. Observed range of temperature between 7 and 10 C. Inserts near the customer side of unit better. All below 4 C. Measured three insert troughs. Again, the trough located on the customer side at 2.5 C while the worker side at 11 C. (area below the inserts).
Corrective Action(s): Have service technician check unit to verify it is working to proper specs. As temporary measure: A) limit quantities of proteins to half normal capacity to encourage quicker turnover of product; B) Cover inserts in problem line of proteins; C) Ensure staff keep clam shell lid closed when not directly making sandwiches.
