Observation (CORRECTED DURING INSPECTION): Cleaned meat slicer had meat debris present behind the blade guard.
Corrective Action(s): Meat slicer was taken apart to be re-cleaned and sanitized at time of inspection.
Ensure staff are trained on how to properly clean and sanitize all parts of the slicer.

Observation: - Bleach solution in both sanitizer buckets tested to be over 200 ppm.
- Many food items in coolers were not properly covered.
Corrective Action(s): - Both buckets were diluted at time of inspection. Ensure to mix only 1 oz of bleach per gallon of water for proper concentrations. Corrected at time of inspection.
- Ensure all stored food items are properly covered.

Comments

- Hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine to the rinse cycle, detected at the dish surface
- All coolers were measured at 4C or colder
- Walk-in freezer measured at -23C
- Accurate thermometers available. Temperature logs in use.
- Broth is pre-mixed in large pot and stored in walk-in cooler, then cooked in smaller batches.
- Discussed thawing procedures - thaw all frozen food in coolers overnight or under cold, running water. Also discussed cooling procedures.
- Bean sprouts were stored in a colander in a small portion and placed on ice - good. Larger bin of bean sprouts stored under cold, running water - good.
- Ice machine was observed to be clean. Ventilation canopy was observed to be clean.
- General sanitation satisfactory
