Observation: The sanitizer dispenser at the 3 compartment sink is broken. Staff mentioned that a technician will be coming to fix the sanitizer dispenser today.

Manually prepare the sanitizer solution using 1 capful of QUATS sanitizing solution and 1L of water. Use QUATS test strips to ensure that the concentration is between 200-400ppm

Observation (CORRECTED DURING INSPECTION): An insert containing steak is observed thawing on the counter. The surface temperature of the steak is 0.4C. Bacteria can grow rapidly when when food is thawed at room temperature.
