Observation (CORRECTED DURING INSPECTION):
- Cut cucumber and shredded cabbage stored in 2 door cooler where air temperature measured 7.4 deg.C as per probe thermometer. Facility was instructed since last follow-up to store non-PHFs only until cooler can be serviced.
Corrective action: relocate cucumber and shredded cabbage into another funtional cooler.

Follow-up to inspection report #252923

- Dishwasher remains to be serviced however is not in use.
- Facility is able to rely on manual warewashing in the meantime. Resource documents provided.
* Use single-use utensils and equipment as much as possible until dishwasher is serviced to minimize the demand

** Correction order issued.


Contact the undersigned once previously discussed repairs have been completed.
- Dishwasher must be able to reach 71 deg.C at the plate (82 deg.C at the gauge). Thermolable provided.
- 2 door cooler must achieve and maintain an air temperature of 4 deg.C or colder.
