Observation (CORRECTED DURING INSPECTION): 1. Display cooler: Four different milk cartons have been probed. Probe measured 7.5-12C
Amibent temperature of display cooler measured 8-12C at the front.
2. Cheese Display cooler: Front cheese probed at 12C at the top most tier. Back cheese probed at 5.6C.
Amibent temperature of cheese display cooler measured 8C at the front.
Corrective Action(s): All potentially hazardous food must always be stored at 4C or below.
1. Instructed staff to discard all the potentially hazardous foods that were not meeting the temperature requirements.
Front two rows of 4L milk jugs, front two rows of eggs, front row of 2L and 1L of milk cartons and yogurts. Cheeses, quiches, and other potentially hazardous food discarded.
2. Instructed staff to discard cheeses that are on the top tier that are not covered by the overhang.
Visual confirmation that food has been pulled off the shelf.

Observation (CORRECTED DURING INSPECTION): Spray bottles of QUAT sanitizer measured at 50ppm.
Corrective Action(s): QUAT sanitizer dispenser dispenses QUAT at 200ppm. Instructed staff to refill the spray bottles.

Observation: Bags of dry ingredients and a carboard box of bananas observed to be stored directly on the floor by the baking area/walk in freezer with the back door open with no screen.

Observation: 1. Display cooler with milk, eggs, cheese, quiches, and other potentially hazardous food observed to have an amibent temperature at 9-11C at the front. Back amibent temperature at 4C.
2. Cheese display cooler amibent temperature of top most tier measure 8C at the front
Corrective Action(s): Please ensure the coolers can maintain 4C and below thorough out the entire cooler. Please ensure the thermometers are accurate.

Comments

- Handwashing station fully equipped with hot and cold running water, liquid soap, and paper towels
- All coolers (except the main display cooler and one of the cheese display cooler) are at =<4C
- All freezers =<-18C
- All hot holding at >=60C
- High temperature dishwasher measure 74C final rinse at plate level
- Staff has valid FOODSAFE
- No signs of pests, last pest report was reviewed and no pest activity was reported
- Temperature log is being maintained, document temperature twice a day.
** Have a separate probe thermometer to verify that temperature readings on the coolers/freezers are correct.

Note:
- Went over the result of the Food Sampling. Aerobic colony count is at 'cautionary'. Sanitation improvements have been discussed.
- If back door is to remain open for air circulation please install a screen to prevent pests from coming into the facility.
