Observation (CORRECTED DURING INSPECTION): Did not note and cloths stored in the sanitizer in the kitchen area. Sanitizer was at the dishwashing area and not readily available in the food preparation area.
Corrective Action(s): Ensure sanitizer solution is conveniently located within the food preparation area for immediate use. Keep wiping cloths stored in sanitizer solution to prevent microbial growth.

Observation: Noted a container of uncovered frozen beef on the ground near the meat slicer which was in use at time of inspection.
Corrective Action(s): Do not store open/uncovered foods on the ground.

Observation (CORRECTED DURING INSPECTION): Noted container of uncovered frozen beef on the ground near the meat slicer which was in use at time of inspection. Another large piece of beef was being sliced.
Corrective Action(s): Do not store frozen potentially hazardous foods at room temperature. Keep them stored in the freezer or cooler unit until ready to use.

Observation: Noted cardboard on the ground in front of the cookline and at the drink making area.
Corrective Action(s): Remove cardboard as it can't be cleaned/sanitized. Ensure floors are cleaned so that they are not slippery or obtain proper washable/non absorbent floor mats that are intended for commercial kitchen uses.

All hand wash stations (bar, kitchen, washroom) fully equipped with soap, paper towel, hot and cold running water and were accessible at time of inspection.
All coolers 4⁰C or less (walk in, prep, under counter...etc)
Bowl of bean sprouts and toppings on ice - no concerns at time of inspection.
Chest freezers x2 less than -18C.
Hot holding of rice 66C
Chlorine sanitizer 100ppm in the kitchen and at the bar.
General sanitation satisfactory. No obvious sign of pest infestation noted. Back door was closed at time of inspection.
Meat slicer was in use at time of inspection. Operator said it is cleaned/sanitized after each use.
Ice machine appeared clean at time of inspection with the scoop stored outside of the ice in a separate container.
High temperature dish washer achieved 71.9C (with min/max thermometer)
Lights in food preparation areas had sleeves and door to washroom outside of kitchen entrance was self closing.
