Observation: Front display cold meats/proteins cooler found to be at 17.5 C. Staff on site claimed that the front display cold meats/proteins cooler is broken for a while and they use ice under insert containers. Internal temperature of food from 2.3 C to 5.4 C. A replacement part has been ordered.
Corrective Action(s): Repair the front display cold meats/protein cooler as soon as possible. Cold meats/proteins must be stored safely. Continue to use ice; limited amount of meat in insert containers for display (1/3 of the container and limited time/e.g., 1h/); all displayed cold meats/proteins must be served within limited time or rotate containers; keep extra containers with cold meats/proteins in a different cooler (e.g., the walk in).

Note: Observed a plastic insert container on the floor near the handwashing sink. If a faucet is not in a good working order - repair it.

Three compartment sink - satisfactory.
