Observation: Commercial dishwasher is not in use and, as per operator, makes a loud noise when turned on.

Corrective Action(s): Continue to use only disposable utensils for customers and wash, rinse, sanitize, and air dry all other utensils in the triple sink.
An application form is needed to reflect changes to show "Single Service Utensils ONLY" on your permit if this is to be a permanent change.

Permit fee for Ocean Rock Bistro (restaurant) received today from operator. (Cheque #017 for $150). Thank you.

Routine inspection:

The left side washroom is in operation.
The right side washroom is closed at this time but does have hot and cold water to the sink and can be used once the toilet is re-installed. Operator advises there was a previous flood in this washroom in April. Always keep paper towels in a dispenser at all hand sinks.

Large ice cream/gelato machine is not in use and operator advises won't be used this year. You are not permitted to use this machine as written cleaning and sanitizing information has not been submitted.
Gelato and ice cream ingredient information must be available in order for you to provide accurate ingredient information to customers.
Provide supplier receipts to me for gelato - scan/email to me as soon as possible.

"Fried ice cream machine" for ice cream made to order can be used as long as it, including all food contact surfaces are 1. washed with dishsoap and warm water, 2. rinsed with clean water, 3. sanitized with a sanitizing solution (such as chlorine bleach 1 tsp in 1 litre water), and 4. air dried. Do this every 4 hours.

Rough surface of reach in display cooler (currently not in use) has been re-surfaced and is easier to clean with fewer sharp or rough areas.

Cleaning has improved. Ensure that you follow a written, routine cleaning schedule and remove any unneeded items.

Quats sanitizer bottle has been labelled.
Hand washing station at kitchen hand sink has liquid soap and paper towels.
The fridge that is in use has an air temperature of <4 C.

Keep accurate ingredient information on-site for ALL foods including gelatos and ice creams.
