Observation (CORRECTED DURING INSPECTION): Discussed how the cooked congee in large pot from last night was cooled down -temperature was at 11 deg C in the fridge:

1. Congee is cooked then placed on table for a few hours then placed in cooler
Corrective Action(s): Discard congee

IMPROPER COOLING -you must be cooling foods FAST as per your Food Safety Plan:

Step 1: 60 deg C to 20 deg C within 2 hours: ice baths / ice wands / wide-shallow pans
Step 2: 20 deg C to 4 deg C within 4 hours: transfer to fridge

Operator will buy a few Cooling Wands to facilitate this process

Observation (CORRECTED DURING INSPECTION): A number of designated handsinks have dispenser that are not working -no paper towels coming out
Corrective Action(s): Repair/replace dispensers -recommend taking off the black covers

Observation: 1. Pooled raw eggs stored in fridge.

2. Foods stored under sink

3. Open canned goods stored in fridge and counters: soy sauce, cream of corn

4. Algae growth observed in live seafood tanks

5. Double stacking of foods observed in Walk-in cooler

6. Light covers missing in main walk-in cooler and 2 fluourscent light panels in dry storage area
Corrective Action(s): 1. Pooling of raw eggs not allowed -discarded 3 containers -review Pooling Booklet provided (Chinese version emailed to operator)

2. Do not store foods directly under sinks (sinks have a tendency to leak)

3. Discard open canned goods. Once canned goods are opened the contents must be completely emptied

4. Clean and disinfect tanks to prevent the growth of algae (algae will poison the seafood)

5. Do not double stack foods without lids inbetween.

6. All lights in food areas require shielding (standard covers or plastic tubing okay)

Observation: Frozen scallops defrosting in stagnant water unprotected.
Corrective Action(s): Proper defrosting involves the following methods:

-overnight in the fridge (optimal)
-under cool running water OR change the cool water every 30 minutes AND frozen seafood contained in orginal bags to protect from contamination
-as part of the cooking process

Observation (CORRECTED DURING INSPECTION): Back exit to shared hallway wedged wide open
Corrective Action(s): This is a shared space and leads to the dumpster -keep this door closed to better prevent rat/fly entry

Observation: -Dry storage area filthy, disorganized and goods stored directly on the floor REPEAT INFRACTION

-Stove line cooking wok side -underneath is filthy

-Seals between 2-compartment sinks outside Walk-in cooler is filthy
Corrective Action(s): Clean and disinfect these areas DAILY!

-Replace the seals between the 2-compartment sinks

Professional pest control comes on a regular basis: Dashing Pest Control -no activity as per last report

Place fetal alcohol sign in Men's Public washroom as the city bylaw now required in all public washrooms
