Observation (CORRECTED DURING INSPECTION): Insert of garlic butter was left out on counter. Temperature read 8C.

Correction: insert was relocated to prep cooler immediately. It should only be brought out for immediate use when necessary.
> All cold potentially hazardous foods must be stored in 4C or colder to minimize pathogenic growth.

Observation (CORRECTED DURING INSPECTION): QUATS spray bottles in back of house measured 50ppm. Chlorine solution in sanitizer bucket for front of house measured 0ppm.

Correction: QUATS solution was refilled, now measures 200ppm. Chlorine solution adjusted to 100ppm.
> QUATS solution is RTU (ready to use). Directions on the label indicate to "change solution regularly" - facility was changing the solution approx. every 2-3 weeks. The solution should be changed more frequently to ensure concentration remains at 200ppm.

Observation (CORRECTED DURING INSPECTION): Back hand sink next to dishpit did not have paper towels in the dispenser.

Correction: dispenser was refilled at time of inspection.
> All handwashing stations must be adequately supplied at all times with hot+cold water, liquid soap and paper towels.

Observation: Cleaning is required in the following areas:

> Between and under cooking equipment - food debris and oil
> Undercounter freezer - ice build up on the front surface between gaskets
Corrective Action(s): Clean and sanitize above mentioned areas. Remove ice buildup on freezer.
