All refrigerators and freezers meet requirements.
Hot holding for insets meet requirements, soup warmer slightly cool at 58C - 59C after stirring soup - increase temperature of the soup warmer to ensure food is maintained at 60C at all times.
Manual dishwashing at 200 ppm. Make sure that sanitizer levels are checked after each sink-full has be removed. Sanitizer must be changed regularly throughout the day to ensure the efficacy of the sanitizer.
General sanitation satisfactory, no indications of insect or rodent infestation.
NOTE:
Updated Environmental Health Bulletins, boil water, small fires, and food safety during a power outage provided for review and inclusion in the food safety and sanitation plans.
