205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Cooked chicken breasts and ground meat were being kept at room temperature. The temperature of the chicken and the ground meat were 28 degC and 25 degC respectively. They were both moved to the cooler right away.
Corrective Action(s): When cooling, make sure to move foods inside the cooler after an hour or so when the temperature of the foods are around 20 degC.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Dishwasher had no detectable sanitizer in the rinse cycle. Operator contacted the servicing company and a rep arrived on-site during the inspection. The sanitizer solution had to be replaced with a new one after which 50ppm chlorine was detectable.
Corrective Action(s): Monitor your dishwasher sanitizer levels with test strips regularly.

Observation: The hand sink attached to the prep counter across from the 2-compartment sink is not operational. The faucet has been removed and the taps are taped up.
Corrective Action(s): Get the faucet replaced and the hand sink working again, as discussed.

Observation: Wooden planks (topped with paper) are being used to serve foods on.
Corrective Action(s): This is not acceptable. Use dishware that can be adequately cleaned and sanitized. Do not use wooden planks for this purpose. Discard these immediately.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: -The white colored fridge/freezer in the kitchen is not working. All the foods have been moved into the walk-in cooler and the smaller fridge in the kitchen.
- An orange towel is being used on top of the chest freezer to soak up water from the wet dishes that are placed on top of the freezer.
Corrective Action(s): -Fix or replace the white colored fridge. Owner mentioned that a new fridge has been ordered and will be delivered next week.
-Do not use towels for this purpose. Wipe down the top of the freezer regularly as required.

A FOLLOW-UP WILL BE CONDUCTED NEXT WEEK FRIDAY (AUG. 5). ENSURE THAT THE FRIDGE HAS BEEN FIXED/REPLACED AND THE HAND SINK IS OPERATIONAL.
