Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in kitchen was too strong, bleaching out the test strip. Sanitizer solution in server area was at 0 ppm.
Corrective Action(s): Ensure to mix 1 oz bleach with 1 gallon water (or 1 tsp bleach with 1 litre water) for proper concentrations, and change solution every 2 hours or sooner if solution becomes visibly cloudy or dirty.

Observation: Tin cans and aluminum take-out trays being reused. Employee was seen running aluminum take-out tray through dishwasher. Cardboard being used to line shelves/racks.
Corrective Action(s): Repeat violation. Do not reuse items meant for single-use. Tin cans and take-out containers cannot be properly washed and sanitized. Discard all tin cans that are being reused in the facility. Do not line surfaces with cardboard - all surfaces need to be non-absorbent and easily cleanable.

- Low-temperature dishwasher had 50 ppm chlorine residual detected at dish surface after rinse cycle
- Most food items in coolers were covered - ensure ALL foods are stored properly covered
- Good separation between raw and ready-to-eat items
- Dry ingredient bins maintained in sanitary conditions. **Reminder that scoops must not be stored directly in dry ingredients. Wash and sanitize scoops after each use and use only as needed.
- All coolers were at or below 4C
- All freezers were at or below -18C
- Hot holding units were above 60C
- Ice machine maintained in sanitary condition
- General sanitation satisfactory
