Observation (CORRECTED DURING INSPECTION): 2 flats of eggs stored at room temperature at 20 deg C -worker indicates they were taken out at noon -it is now 2pm

Observed worker place these eggs back in the Walk-in cooler then take out a fresh flat of eggs
Corrective Action(s): Discard the 2 flat of eggs

Any perishable out more then 2 hours must be discarded. Do not place back in the fridge -the time is accumulative at room temperature

You are to TIME STAMP the eggs to know exactly when to discard them -I suggest you take out only enough eggs that will be used within 2 hours

Observation (CORRECTED DURING INSPECTION): Employee washroom again has no single-drying method -paper towel dispenser empty. This was noted in previous Routine Inspection as well

Increased enforcement such as tickets will be required with further repeat infractions

Observation (CORRECTED DURING INSPECTION): Walk-in freezer at -1 deg C. Operator indicates GFS turns off the Walk-in freezer during deliveries -this was over 2 hours ago and the unit power is still turned off.
Corrective Action(s): DO NOT TURN off the Walk-in freezer at any time unless it is being serviced and there are no foods contained.

Observation: Downstairs lockerroom filthy and littered with clothing/shoes

Bare paper towel rolls are left out -ends are contaminated
Corrective Action(s): Remove all unused clothing/shoes from downstairs. Mop the sticky floors.

Any used paper towel rolls must be dispensed to better prevent ends from being contaminated. Use your dispensers available -spindles with base are acceptable

Daily tracking sheets maintained for fridges, hot holders and mechanical washer

General Sanitation
In-Use Utensils: changed and dishwashed every 2 hours as per operator
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests

Professional pest control comes on a regular basis: Orkin Pest Control comes in monthly -no activity as per last report

Other Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
