Once line was uncrimped a residual of approx 300ppm quat was measued in the final rinse. Corrective Action(s): Re soak pizza utensils in the quat sanitizer as discussed When changing sanitizer container verify the concenttation of quat to ensure a minumum of 200ppm is being dispensed Violation Score: 15
