Observation (CORRECTED DURING INSPECTION): Rice stored in the rice cooker was probed to be 54C since noon and it has been 3 hours 25 minutes. Temperature was not checked. Rice cooker lid is broken.
Corrective Action(s): Do not serve rice anymore until you obtain a new rice cooker. Rice removed. Operator called daughter to update menu for online order right away.

Observation (CORRECTED DURING INSPECTION): Meat slicer used yesterday was observed to have some food debris on the blade and under guard.
Corrective Action(s): Please ensure that the meat slicer is taken apart and thoroughly cleaned and sanitized after use, if not every 4 hours. Operator cleaned the unit at time of inspection.

Observation (CORRECTED DURING INSPECTION): 1) A few inserts of food were stored in the cooler without cover. 2) Ice scoop and spoon used to dispense ice was stored with ice. Scoops for bulk items also stored embedded with bulk food.
Corrective Action(s): 1) Ensure to cover food when not in use. 2) Store ice scoop and spoon in a cup outside of ice machine and bucket of ice so that hands do not come in contact with ice when reaching for handle. Same comment for bulk food.

Observation (CORRECTED DURING INSPECTION): Carboard was taped under lid of undercounter cooler (used to be storage only, unit recently turned back on; temperature is adequate.
Corrective Action(s): Cardboard removed onsite. Cardboard is not a suitable material for food contact surface.
