Observation (CORRECTED DURING INSPECTION): -Potentially hazardous food stored in 'Foster' display cooler was above 4C. Air temperature of the cooler was 15C.
-Temperature of product (internal) was as follows: Quinoa salad 14.4C, Cobb salad 13.5C, Mousse 15C
Corrective Action(s): -Operator was directed to discard product. Product discarded: Quinoa salad (14), Cobb salad (9), Mousse (8)

Observation: -Mouse droppings noted in the following areas:
-Storage shelving at front of unit adjacent to bay door
-On the floor along the wall behind chest freezers
-On prep table where mixer is located
-Flies noted within the premises at the time of the inspection.
Corrective Action(s): -Clean up all droppings and sanitize areas. Keep floor area clear to facilitate cleaning and monitoring. Immediately clean up any additional droppings noted.
-Keep bay door and front door closed to prevent access.
-Ensure sanitation level is maintained and spills, food debris are cleaned up immediately.
-Pest Control contract in place with monthly service. Multi-catch traps present. Service should be increased if activity does not decrease.
-Provide control for flies [Correction date: 19-Jul-2018]

Observation (CORRECTED DURING INSPECTION): -Bay door was partially open with poor fitting screen which had holes and front door was open at the commencement of the inspection.
Corrective Action(s): -Keep doors to the food preparation area closed unless they are equipped with tight fitting screens in good repair which prevent entry of pests.

Observation: -Temperature of the 'Foster' sliding door cooler was 15C. Food stored in the unit was 13.5-15C (internal temperature)
Corrective Action(s): -Repair or replace cooler and do not store any food in the unit until it is capable of maintaining a temperature of 4C or colder.

Observation: 'Foster" sliding door cooler and undercounter prep station cooler lack thermometers.
Corrective Action(s): -Supply thermometers to all coolers so that temperature of units can be monitored. [Correction date: 19-Jul-2018]

Comments

-Handsink in kitchen and handsink in staff washroom supplied with hot and cold running water, liquid soap and paper towel.
-Cooler temperatures (with the exception of the 'Foster' cooler noted above) were operating at acceptable temperatures (4C or colder):
-Walk-in cooler 4C
-2 door 'True' cooler 2C
-Undercounter small cooler (front service) 2C
-Single door 'True' cooler 4C
-2 door 'Delfield' cooler 2C
-Cooler at prep table 3C
-Chest freezer were -16C to -20C
-High temperature dishwasher was functioning and met sanitizing temperature requirement. Final rinse was 71.4C at the dish surface. Ensure wash and rinse temperature are monitored daily.
-Quats sanitizer (200ppm) present in spray bottles for sanitizing food contact surfaces.
-Sanitation was satisfactory although some grime/mildew noted on wall behind dishwashing sinks. Operator reported he plans to change/upgrade this area. He indicated plans have been submitted to the City of Burnaby. Any changes to layout require prior review and approval by Fraser Health. Plans have not yet been received by Fraser Health. Ensure approval is received prior to changes being made.
