Corrective Action(s): Premise does not have an established cooling process, temperature logs are not maintained for the cooling of cooked food products.

Food items are not to be cooked in advance and cooled unless a cooling process is established.
Foods are to be cooked and placed in warmer units as needed. Unused hot food inserts can be used to increase hot holding capacity for high demand food items to ensure continuous supply.
