Observation: Multiple storage containers in the walk-in cooler and prep cooler were found uncovered that could result in contamination of food.
Corrective Action(s): Store the food in a way that would prevent the risk of contamination. Keep the food properly covered and have the lids on the containers.

304 - Premises not free of pests [s. 26(a)]
Observation: Few mouse droppings were observed in one of the corner of back storage area.
Corrective Action(s): Ensure that the facility is maintained and kept free of pests. Clean the mouse droppings and disinfect the area with 1 part bleach to 9 parts water solution. Use proper PPE during cleaning.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Duct tapes were observed on all 4 doors of prep cooler and were used to keep the seal in place. Duct tapes are tend to be sticky and do not clean properly, as a result they can serve as a breeding ground for bacteria to grow. Moreover, the loose seal on doors can prevent the cooler to maintain a temperature of 4C or less.
Corrective Action(s): Remove the duct tapes and repair the cooler to ensure that the broken/damaged seals are replaced and are maintained in good working order.

Comments

Routine inspection conducted at the food premises and the following observations were made during the inspection:

Temperature:
- Walk-in cooler measured at 0C.
- Chest freezer at -19C
- Smaller chest freezer at -29C
- Prep cooler at 4C (bottom & top)
- Pop cooler at 4C
- Pizza hot holding unit at 63C.
** Ice build-up noted in both freezers. Consider defrosting/service the freezers.

Hygiene and Sanitizing:
- Hand wash station was provided. Some leakage problems noted at the handwash sink station.
** Repair the handwash station.
- Sanitizer spray bottle available and the concentration of bleach noted at 200ppm.
- 3-compartment dishwashing sink available and the operator demonstrated proper dishwashing method.
- Utensils and tongs were found in sanitary condition.
- Slushie customer self-serve area was found clean.
- Washroom was maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Pest Management:
- Professional pest control company conducts routine checks.
- Mechanical traps were present throughout the facility.

Administrative:
- Operating permit was available on site.
- Operator has valid FoodSafe Level 1 certificate.
