Observation (CORRECTED DURING INSPECTION): -Muffin baking tray, pots and pans noted stored on the floor.
Corrective Action(s): -Do not store food equipment on the floor. Re-wash and sanitize items. Store clean equipment/dishware in a clean location (ie. on shelving) to protect items from contamination.

Observation: -Dirt, grease noted on floor particulary in dishwashing area where items were stored on the floor.
-Dust accumulation noted on grate above dishwashing area.
Corrective Action(s): -Remove all moveable items from the floor and thoroughly clean the entire floor to remove dirt and grease. Keep floor area clear to facilitate cleaning. (Corrected)

Comments

-Handsink supplied with hot/cold water, liquid soap and paper towel.
-Coolers were operating at acceptable temperatures (4C or colder):
-Sliding door cooler 3C
-Undercounter cooler 2C
-Prep cooler 3C
-2 door stainless cooler 1C
-Freezers were maintaining product at a frozen state
-1 door stainless freezer -12C
-Chest freezer -15C
(Nestle ice cream freezer not in use)
-No hot holding occurring at the time of the inspection.
-High temperature dishwasher met wash and rinse temperatures required. Final rinse at dish surface (measured with min/max thermometer) was 80.1C. Reviewed checking wash and rinse temperature using external gauge with Operator
-Bleach sanitizer solution (100ppm chlorine) present to sanitize food contact surfaces. Wiping cloth stored in solution.
-Ice machine basin appears clean/maintained.
-No signs of pest noted. Pest control contract in place with monthly service.
***Operator believes he completed Foodsafe level 1 in 2009. Foodsafe level 1 certificates issued on or before July 29, 2013, expired on July 29, 2018 although the recertification period has been extended until August 31, 2018. See foodsafe.ca regarding recertification to ensure compliance with Foodsafe level 1 requirements. The Operator must have completed Foodsafe level 1 and in the Operator's absence, there must be 1 staff member present who has completed Foodsafe level 1.***
