-General sanitation was good.
-Permit posted in conspicuous locations.
-Temperature logs provided.
-Quat sanitizers were 200ppm (spray bottle, bucket, dispenser at sink)
-Temperatures:
prep cooler = or < 4C (chicken 3.8C, bacon 3.3C, pepperoni 3.2C), bottom at -0.4C.
coca cola cooler at 4.0C
walk-in cooler at = or <4C (tomatoes 3.4C)
-Food Safe Certificate valid for Manager present
-Hand washing stations front and back had hot and cold running water, hand soap and paper towels.
-Manual dishwashing in 3 compartment sinks demonstrated by staff. 200ppm quats sanitizer at dispenser for third comp sink.
-Good storage practices in walk-in cooler (food items were covered, labelled and dated).
-Thermometer provided for inside walk-in cooler, prep cooler.

*Test strips provided for test the sanitizer was pH test strips. Advised to use test strips that measured quats ammonium compounds.
