Observation (CORRECTED DURING INSPECTION): 3 compartment sinks - missing plugs to allow sinks to be filled to allow for cleaning and sanitizing dishware.

Wiping rags in front sanitizer container - 0 ppm Quaternary Ammonia
Corrective Action(s): Manager obtained 3 plugs during inspection and was able to fill all 3 sinks to allow for correct manual dishwashing.

All wiping cloth rags in use are to be stored in a container of sanitizer solution (200 ppm Quaternary Ammonia, to be verified by test strip).

Observation: Metal wire fragments found on counter top by oven tray and sandwich grill from using wire scrubbers for cleaning.
Corrective Action(s): Discontinue using wire scrubbers on food equipment or take measures to ensure wire fragments are not left on surfaces to potentially contaminate food.

Observation: Live and dead cockroaches (glue board cabinet below pop dispenser) observed in front service area.

Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
