Observation (CORRECTED DURING INSPECTION): Observed operator wash dishware in 2 compartment sink without sanitizing them and putting them away for storage. Large stock pot was greasy on the outside to the touch
Corrective Action(s): Ensure that all food contact surfaces are properly cleaned and sanitized
All equipment able to be washed in the dishwasher MUST BE washed through the machine

Observation (CORRECTED DURING INSPECTION): 2 compartment sink is used as a handwash station by the operator. This sink was missing liquid soap in dispensers and paper towels

Observation: Shredded paper and rodent droppings found in cabinet underneath 4 burner stove.
Rodent droppings found in the following areas;
-underneath the 2 compartment sink
-on the lazy-boy style chair in the storage room
-behind the above noted chair
-along the walls in the storage room and behind various equipment
-in hard to reach corners of the food prep area
-behind the storage rack in the washroom

Corrective Action(s): Remove the shredded paper and rodent droppings. Conduct a thorough cleaning and sanitizing of the facility.

Observation: Excess amount of cooking equipment and items not required for daily operations in the food storage and food preparation areas. This can be found underneath countertops, corners of the kitchen, and in the storage room
Corrective Action(s): Remove ALL equipment not required for daily operations. This includes:
-pots and pans
-plates, cups, and cutlery
-cooking equipment such as slow cookers, rice cookers, grills, etc
-multiple canisters of coffeemate
-lazy-boy chair in the storage room
-unused (not installed) shelves
-any other items not required for the daily operations of the facility or not used within the last year

Observation: REPEAT ISSUE: Grease build up (brown) found on walls around the 4 burner stove and on shelves around the 2 compartment sink. Electrical fan was found to be heavily soiled with old grease.
Various equipment (both dishware and cookware) as well as rice cookers and electric hot holders, found to be soiled with grease on the sides as well as on lids.
Corrective Action(s): Conduct a deep clean of the facility. This must be done on a more frequent basis.

=chest freezers measured -20C to -13C
=Taiwanese meat sauce hot holding measured 36C as per violation above
=High temperature dishwasher had a final rinse temperature of 72.5 C at the dish surface (minimum 71 C required for proper sanitizing)
=Bleach sanitizer solution at >400 ppm chlorine available in spray bottles. remake the solution immediately.
=Operator's FOODSAFE level 1 certification verified to be valid to August 2026
