Observation (CORRECTED DURING INSPECTION): 1) Seafood and tofu on the toppings cooler were measured at 13 to 14.9C. 2) Meat (raw and cooked) in the walk-in cooler was measured at 5.3C to 6C. Time of inspection was after lunch.
Corrective Action(s): 1) Discarded seafood from prep cooler (mussels, calamari, fish ball and tofu). Repair the worn off door seal on the bottom of prep cooler, clean the unit and repair if cooler is unable to maintain 4C or colder. 2) Monitor food temperature to ensure walk-in cooler is able to maintain 4C or colder, repair if unable to maintain the temperature.

Observation (CORRECTED DURING INSPECTION): Dishwasher (low temp) dispensed 0ppm chlorine at first attempt. Sanitizer bucket was empty.
Corrective Action(s): Operator changed sanitizer bucket, primed the machine and rerun the dishwasher. 100ppm chlorine was detected at plate level. Please remember to check your dishwasher everyday to ensure it is operating.

Observation (CORRECTED DURING INSPECTION): A frozen turbot fish (9C) was left in the kitchen handwashing station.
Corrective Action(s): Relocated turbot fish to adjacent prep sink to properly thaw food. There should not be anything inside the handwashing station at all times.

Observation: Ants observed crawling in from the back door. Small swarm of flies noted outside of back door.
Corrective Action(s): Please request pest control service to deterine the source and deter pest entry. Recommend identifying and removing source for pest, and increase protection on screen door.

Observation: Grease noted on exhaust hood, even on the outside of canopy. Food debris in unused oven (tray inside), on the shelves and cooler doors/shelves and floor of walk-in cooler. Sink storing unused pearl pot appears to be build up. Meat juice spill in standup freezer in the back storage.
Corrective Action(s): Please complete a DEEP CLEAN in the premises so food debris are removed and surfaces are cleaned and sanitized.
