Corrective Action(s): All wiping cloth rags in use are to be stored in a container of sanitizer solution (100 ppm chlorine, 1 tea spoon of bleach per 1 litre of water).

Utensils in use stored in containers of sanitizer.
Corrective Action(s): Relocate boxes of containers to shelving in back kitchen.

Do not store food utensils in sanitizer as this poses a risk of chemical contamintation of food. Utensils in use can be stored dry or an ice filled containers.

Handwashing facilities maintained – warm water supply, stocked liquid soap and papertowel dispensers.
Premise sanitation is satisfactory.
No signs of pest activity observed. Ensure back door is kept closed or install a pest proof screen door.
3 compartment sink correctly set-up for manual dishwashing (Sanitizing sink 100 ppm chlorine)
2 hour monitoring system in place for cooked tapioca pearls stored at room temperature. Ensure pearls are discarded after 2 hour period.
1 door upright freezer -5 C, 2 door upright cooler 2 C
2 door undercounter cooler 4 C, prep cooler 4 C
Daily temperature logs well maintained.
