Observation (CORRECTED DURING INSPECTION): Old encrusted food debris was noted on the deli slicer. Ensure equipment is properly washed and sanitized after each use or when switching between different food product (ie: from raw to read-to-eat)

Observation: Bottle of spray sanitizer was hanging over prep-table inserts. To prevent chemical contamination of food products, ensure sanitizer is stored below food products.
Used wiping rags were stored directly on prep-table. Bacterial can grow on the wiping rags once they are used. Ensure wiping rags are stored in a bucket of sanitizer.
Fan cover for prep cooler was unsanitary. All prep cooler fans need to be properly washed and sanitized.
Pop gun and dispenser were not maintained in a sanitary manner. Ensure the pop gun and dispense are washed and sanitized at the end of each night.

Routine inspection conducted and the following were noted:
Food items stored in the inserts of the prep-cooler were less than or equal to 4C.
Walk-in cooler and lower compartments of the prep-cooler were less than 4C and equipped with thermometers.
Chlorine dishwasher achieved a concentration of 100ppm. Chlorine test strips available.
Hot holding of food products at 60C.
No pest activity noted.
Food items properly covered in cooler units.
Walk-in freezer at -18C.
Glassbar washer was not in good working order and was getting serviced at the time of inspection. Ensure iodine glassbar washer is capable of achieving a final rinse concentration of 12.5ppm and test strips are available.
