Observation (CORRECTED DURING INSPECTION): -In use utensils for scooping rice and meatballs were stored in container with water. Water was visible soiled with food remnants.
Corrective Action(s): -Dump out container of water. Wash and sanitize untensils.
-Store in use utensils on a clean surface of the prep/service or in product with handles not in contact with product or in ice water. For all of the above, replace utensils with clean/sanitize utensils every 4 hours.

Comments

-Premises and equipment maintained in a sanitary condition.
-Handwashing sinks at kitchen line and front service area supplied with hot and cold water, liquid soap and paper towel. Sink at smoothie station dedicated to smoothie preparation, not for handwashing.
-Coolers were operating at acceptable temperatures:
-Walk-in cooler 3C
-1 door reach in cooler 3C
-Line cooler 3C (Food in inserts at 4C and stored on ice)
-Drawers under grill 2-3C
-Undercounter (smoothie station) cooler 4C
-Undercounter (beverage) cooler 4C
-Walk-in freezer was at -16C
-Undercounter freezer (smoothie station) -11C
-Potentially hazardous foods were held hot at acceptable temperature (60C or above):
-Rice in rice cooker (60C), Meatballs (78C), cooked chicken breast on flat top (61C), Chicken noodle soup (72C), Cream of vegetable soup (65C)
-Dishwasher operational and met sanitizing requirement. 100ppm chlorine detected on dish after cycle. Residual tested and recorded daily.
-Temperature records for refrigeration and freezer units monitored and recorded daily.
-Quats sanitizer (200ppm) present in spray bottles for sanitizing food contact surfaces, counters and tables.
-Ice machine appears clean and maintained. Scoop stored outside of the ice bin.
-Blender pitchers are cleaned/sanitized (in the dishwasher) after each use.
-No signs of pest activity noted at the time of the inspection.
