Observation (CORRECTED DURING INSPECTION): During time of inspection, no chlorine sanitizer available in kitchen premises
Corrective Action(s): - Chef corrected during time of inspection and food grade sanitizer solution was made with at least 100-200ppm chlorine concentration
- Ensure that chlorine sanitizer solution is always available on site and readily available to sanitize food contact surfaces

Observation: - During time of inspection, slight accumulation of droppings located in the very back room behind milk crates on floor
- Slight accumulation of droppings located on floor by large pots
- No food contact surfaces affected
Corrective Action(s): - Ensure that all droppings from facility are removed
- Ensure all areas are cleaned and sanitized
- Ensure that any holes/ entry points >1/4" are blocked and sealed with steel wool, hard wire mesh or pest block spray foam
- Ensure to follow suggestions from Pest Control Operator and to monitor facility on frequent basis

Routine inspection conducted.
- All handwashing sinks equipped with hot/cold running water, liquid soap and paper towels
- All temperature meet health requirements:
* Walk-in cooler at 4C
* Freezers - satisfactory temperature
- Cooling discussed during time of inspection, ice wand available
- Conveyor dishwasher available, 2 temperature gauges and chemicals available, at least 50ppm chlorine residual being dispensed at final rinse. Temperature at 67.8C at the plate.
