Observation (CORRECTED DURING INSPECTION): Container of sanitizer where wiping cloths were stored had 0 ppm Quats.
Corrective Action(s): Change solution so that it is at 200 ppm. Sanitizer solution must be changed regularly (i.e. every 1-2 hours). Sanitizer system is being changed (from head office) starting in March 2019.

Observation (CORRECTED DURING INSPECTION): Tong found inside a food container in the drawer cooler underneath the grill.
Corrective Action(s): Keep tongs and utensils off of food items (i.e. handles not directly touching food).

Observation: Floors to be cleaned thoroughly. Some corners and hard to reach areas have build up.

Comments

Hand wash stations provided with liquid soap and paper towels.
Walk-in cooler was at 2-4 deg C.
Walk-in freezer was at -18 deg C.
Line coolers were at or below 4 deg C.
Hot holding for gravy was at 62 deg C.
Temperature log was available and up to date.
Dipper well in good working order.
Food items were stored off the floor.
No signs of pests noted. Pest control monitoring in place.
Manager and supervisors have valid Food Safe 1 certification.
General sanitation was ok.
Items to address:
1. Garbage disposal area requires power washing to remove grime and grease on the floor.
2. Fume hood is overdue for professional cleaning. Schedule to clean the fume hood.
3. Create a system so that the sanitizing solution for wiping cloths are change on regular basis.
