Observation (CORRECTED DURING INSPECTION): Soap dispenser in the back (3 comp sink) was not working and soap dispenser in the front service area was clogged up and empty.
Corrective Action(s): Replace broken soap dispenser in the back (for mean time a pump-style soap dispenser is provided) and front service soap dispenser have been refilled and unclogged.

Observation: Shelves in the back area and underneath equipment have debris/grime build up. Also, upright cooler located in the front service area needs some cleaning.
Corrective Action(s): Clean all equipment, shelves and underneath prep area to remove the grime build up.

Comments

Walk-in cooler was at 2-3 deg C.
Freezer was at -18 deg C.
Prep line cooler was at 1-2 deg C.
Hot holding for pizza was at 59-60 deg C.
(Pizza not stored in hot holding cabinet for more than 2 hours. However, provide a timer (set for 2 hours max) as an extra step to ensure food safety if temperature of cabinet does not reach 60 deg C.)
Temperature log was available and up to date.
Bleach sanitizer available at 100 ppm.
Note: Fume hood requires servicing (overdue since July 2017)
Organize storage on the mezzanine level. Keep all food related products off the floor.
