Observation (CORRECTED DURING INSPECTION): Raw frozen meat cones are placed on the upright rotating broiler, cooked partially and placed into the hot holding unit without an additional cook step. Without the secondary cook step bacteria may survive and cause customers to get sick.
*Ensure that when meat gets sliced it is heated up to 74 deg. C in the microwave before being placed into hot holding.

Observation (CORRECTED DURING INSPECTION): Bleach based sanitizer in a labelled spray bottle was tested and found to be 10ppm Chlorine. In order to properly and adequately sanitize food contact surfaces, concentration must be 100-200ppm Chlorine.
*Demonstrated on proper procedures for making bleach based sanitizer to employee.
*Ensure sanitizer is made daily by mixing 1 tablespoon bleach to 1 gallon of water.

Observation: Food debris has accumilated on the floor behind and around equipment in the food prep area in the back. Specifically:
1. The wall where the standing cooler is found.
2. The floor under the shelving units in the back.
3. Dust covering the compressor units of the cooler.
Accumilating food debris on floors and walls may attract pests and contaminate food.
*A thorough cleaning and sanitizing of the areas mentioned above are required to prevent pests and food contamination.
Ensure to move equipment to reach hard to get areas.
