Observation: New ship of boxed food supplies stored on the floor of walk in freezer. Shipment arrived just a couple hours ago.
Corrective Action(s): Ensure to unpack boxes of goods and place at least 15 cm off the ground on dedicated shelving. Corretion required today.

Observation: Walk in freezer and contents at -6C. Ensure this unit can hold contents at -18C or below.
Corrective Action(s): Monitor this unit over night and ensure temperature drops to -18C over night. If not, repair or change setting on unit to reach -18C. Correction required in two days.

Observation (CORRECTED DURING INSPECTION): Walk in freezer built in thermometer is not accurate. It displays the temperature at 5C when the freezer temperature is at -6C.
Corrective Action(s): Ensure to use an accurate temperature monitor for this unit when checking temperatures. The hand held mobile thermometer is acceptable. A mechanical thermometer in the unit is recommended.

Display cooler at 1.6C samosa.
Deli cooler at 3.6C sliced cucumber.
Temperature monitoring and probes in use.
3 compartment sink in use. Bleach sanitizer bottles at 200 ppm in use.
Hand washing stations in use with liquid soap, paper towels and warm running water after correction.
Dish washer final rinse cycle at 100 ppm chlorine at the plate.
Linens are laundered daily washing machine and drier at high setting with bleach.
Single use items are sanitary and discarded per use.
Food, in general, is protected from contamination.
