Code 201 noted on Routine inspection # CHAS-CCBQPE of Mar-08-2022 Food contaminated or unfit for human consumption [s. 13] Observation: Moldy slices of bread being dried in open boxes (for making breadcrumbs). Correction: The boxes of bread had been disposed of. Store in rodent-proof container with lids or purchase premade breadcrumbs.

Comments

Sanitation level has improved. Floors has been cleaned, storage organized, some of the excess equipment and stored items removed. Bread crusts are stored in plastic containers with lids. Keep the kitchen in a clean condition. Continue to rodent proof. Store clean pans and dishes upside down and wipe down all prep counters with bleach solution before starting up in the morning.
