Observation (CORRECTED DURING INSPECTION): No sanitizer solution available in sanitizer buckets with wiping cloths in kitchen.
Corrective Action(s): Ensure all sanitizer buckets are refilled every 4 hours or when solution become dirty/cloudy. Sanitizer must also be available in all areas were food is prepared. Sanitizer buckets were replenished during inspection with 200 ppm QUATS and supplied to all sections of kitchen.

Observation (CORRECTED DURING INSPECTION): 1. Salad tongs stored in room temp water
2. Ice scooper stored in sanitary container next to sanitizer dispenser nozzle.
Corrective Action(s): Ensure food is protected from contamination.
1.Stored tongs in dry insert or insert with ice bath.
2.Ice scooper must be kept away from chemical dispenser to protect contaminating ice/beverages.

Observation: 1.Light bulb out in back food prep area.
2. Large hole in wall behind laundry washer.
Corrective Action(s): Ensure lights are operational to allow for proper cleaning and pest monitoring. Holes and gaps must be filled to prevent possible pest entry into food prep and storage areas.

-Proper handwashing observed during inspection
-Coolers: <= 4 C
-Freezers: <= -18 C
-Hot holding units: >= 60 C
-Sanitizer dispenser noted 200 ppm QUATS
-High temp dishwasher noted: 71.5 C at the plate
-No signs of pest activity noted during inspection
-General sanitation satisfactory
-Food in coolers covered, labelled and stored off the ground

Note:
Flooring in front of walk in cooler has been redone and is now smooth, durable, non absorbent and easy to clean.
