Observation (CORRECTED DURING INSPECTION): 1. Dishes were only being washed with soap then air dried.
2. surfaces were being sanitized with 0 ppm quat
Corrective Action(s): 1, Must sanitize all dishes and equipment when manually sanitizing. WASH with soap, RINSE with water, then SANITIZE with water. REWASH and SANITIZE all dishes, utensils and equipment before using.
2. Must sanitize all food contact surfaces with 200 ppm quat after use or every 4 hours if in continual use.

Observation (CORRECTED DURING INSPECTION): Premises using only 1 of the 3 sinks for ware washing as the other 2 have severe leaks.
Corrective Action(s): Must have leaks repaired immediately as must be able to wash rinse and sanitize dishes and equipment through out the day.

Corrective Action(s): Keep onions and mushrooms in the other hot holding unit and place bacon in the cooler and heat per order until unit is repaired or replaced.

- Hand sinks had liquid soap, paper towel, hot and cold water NOTE: place soap in to a pump bottle.
- No signs of pest activity noted during inspection
- Hot holding of chilli and gravy were 60 C
- Purchase test strips for sanitizer
