209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION):
1) Raw proteins (meats, seafood, fish) were found to be stored above RTE foods in the upright, double door cooler. This is unsafe as juices, containing bacteria, from the raw proteins may drip onto the RTE foods. When customers eat the RTE foods, they may become ill.
2) Food containers were being stacked on top of uncovered food. This is unsafe as the bottom of containers are dirty, and this is now on the food.
3) Foods found to be uncovered in various coolers. Dirt and bacteria can fall onto uncovered food.
4) Bowls of raw chicken was found to be stored on the floor, under the central food prep table. This is unsafe as dirty or bacteria will fall into the raw chicken as staff walk by. Chicken was marinating and to be cooked within the hour.
5) Plastic jugs of juice were found to be stored in the ice bin. This is unsafe as chemicals from the plastic or bacteria on the outside of the jug will get into the ice, which is being used in drinks. **This was mentioned in PREVIOUS INSPECTIONS**.
Corrective Action(s):
1) Reorganize the cooler so all raw proteins are placed on the lowest shelf below RTE foods. During the inspection, staff completed this.
2-4) Immediately cover all food with a lid and/or saran wrap, and store it 6" off the floor on shelves or racks. During the inspection, staff completed this.
5) Remove the juice jugs from the ice bin and store in a working cooler. Do NOT store any items in the ice bin. During the inspection, staff completed this. Tell ALL STAFF not to do this, as it is a repeating violation.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The upper walls, ceiling tiles, and air diffusers in the kitchen are covered in dust again. The dust may drop into food and contaminate it.
Corrective Action(s):
Wash the walls, ceiling tiles, and air diffusers to remove the dust. Install new ceiling tiles if they can NOT be cleaned. Install light covers on all light fixtures to prevent broken glass from falling into food. Manager informed me that this will be completed in March, along with professionally cleaning the exhaust canopy.

Comments

A routine inspection was conduced, the following observations were made:
- Coolers 4C or colder; freezer was -21C; hot holding units above 60C; and thermometers present.
- Low temperature dishwasher rinse cycle had [Cl2] of 100ppm.
- Bleach sanitizer in cloth bucket had [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- No expired foods in use. FIFO rules being followed.
- Generally, foods are being stored in food grade containers; stored in groups; covered; and stored 6" off the floor on shelves or racks.
- General sanitation level is good. Improvement needed in the mentioned areas.
- No signs of pests.
- FoodSafe certified staff present.

**Ensure the amount of food (dim sum, noodles, cut veggies, bean sprouts, etc.), brought out of the cooler, can be used/cooked within 2 hours. If it can't or there is left over, it must be thrown away.**
