203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation:
Covered, pot of hot sauce was cooling on floor in the kitchen. The temperature was above 60C and staff stated that it had just finished cooking and they were allowing it to cool. Cooling foods with the lid on the pot is improper and will not allow foods to cool quickly enough.
Corrective Action(s):
Food shall be cooled in small uncovered containers (not in a big pot), on the counter from 60C to 21C in 2 hours, and then placed in the fridge to further cool from 21C to 4C in 4 hours. Retrain staff on the proper methods of cooling. Use of a cooling wand or placing the small containers in an ice bath will help.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation:
The following areas have accumulated grease and food debris which will attract pests:
- Front flat grill unit; the front and back exhaust canopy; the back stove range burners; the exterior surfaces of the stove; the u/c coolers (interior and exterior surfaces).
Corrective Action(s):
Scrub all these areas with hot water, soap, and degreaser to remove all the food debris and grease. Then sanitize with a hot water & bleach solution.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation:
The hand washing sink in the front grilling area and in the waitress area had no liquid soap and paper towels. As well, there was a water jug constantly in the sink in the front grilling area. Staff are unable to properly wash their hands with the sink blocked and/or lacking the correct items to do so.
Corrective Action(s):
Immediately fill up the soap dispensers with soap and place paper towels at the sinks. Immediately remove the water jug from the sink basin and store elsewhere.

Observation (CORRECTED DURING INSPECTION):
Premises has not paid their yearly health permit and does NOT have a valid decal. Operator was provided a warning letter in July 2017 and has failed to pay it.
Corrective Action(s):
Immediately pay $250, failure to do so will result in the immediate closure of the premises until full payment is received. Manager provided cheque for fees (Cheque #1437).

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The following areas have accumulated grease, food debris and pooling water. This will attract and harbor pests.
- Floors and walls in coolers, freezers, front cooking area, and back kitchen (especially under and behind equipment, tables and shelving units); exterior surfaces of food containers/buckets; wooden platforms in front cooking area; and shelving units in the walk-in-cooler and walk-in-freezer.
Corrective Action(s):
A thorough cleaning from top to bottom of the premises requires to be done. All items shall be removed off floors and shelves so these surfaces can be scrubbed clean. All equipment, tables and shelves shall be moved away from walls so they can be scrubbed clean. Use hot water, soap and degreaser to scrub all areas clean.

Observation:
The waste pipe under the dishwasher is leaking. Water is pooling on the floor under the dishwashing areas and will attract pests.
Corrective Action(s):
Repair the leaking pipe and mop up the pooling water under the dishwashing area.

Observation:
1) Flooring in the back kitchen beside the stove is damaged. It is not sealed, cleanable, and accumulating grease and food.
2) A hole is found in the all behind the prep table in the back kitchen. This will allow entry of pests.
Corrective Action(s):
Repair or replace these damaged areas so that the surfaces are made durable, food grade, smooth, sealed, level, cleanable, and impervious to water.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezer was -16C; hot holding units above 60C; thermometers present.
- Low temperature dishwasher had [Cl2] of 100ppm.
- FoodSafe certified staff present.
- Foods stored in food grade containers; covered; and in groups with raw proteins on lowest shelves below RTE.
- General sanitation is poor, great improvement needed. No signs of pests.
- Provide proof when the exhaust canopies have been professionally cleaned.
- A follow-up inspection to occur to ensure the permit fees have been paid and that cleaning has been completed.
