204 - Food not cooked or reheated in a manner that makes it safe to eat [s. 14(1)] Observation (CORRECTED DURING INSPECTION): All of the donair spits were turned off at the time of the inspection. They must be turned on at all times to prevent the growth of bacteria. Corrective Action(s): Corrected Violation Score: 15 302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Utensils were being washed with soap only. Using a bleach solution (1 tsp per Liter) in the third compartment of the sink and soaking the utensils for 1 minute is required to ensure that utensils are properly sanitized. Corrective Action(s): Use a 100 ppm bleach solution to sanitize everything that is washed in the 3-compartment sinks. Violation Score: 5

Corrective Action(s): Provide confirmation that a pest control company has come on site and clean all droppings with a bleach solutionl Violation Score: 9 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)] Observation: The back door was open at the start of the inspection. This can allow for the entry of pests into the kitchen. Corrective Action(s): Install a screen door within one week. Comments

A ventilation hood has been installed above the donair spits. Ensure that the City and fire department are notified as well. The countertop surrounding the front hand washing sink is now stainless steel. All coolers were < 4 C. All freezers were < -18 C. Foods are kept in pest proof containers. Follow up inspection next Monday.
