Observation: Preparation cooler was found to be 7 degrees Celsius.
Corrective Action(s): Cooler must be capable of maintaining foods at 4 degrees Celsius or less. Adjust thermostat and monitor temperature. If cooler is incapable of maintaining foods at 4 degrees Celsius or less, transfer foods to the other coolers and have the preparation cooler serviced/repaired.

Observation: 1. Bleach sanitizer in spray bottle at front service area had less than 10ppm chlorine.
2. In-use wiping cloths are not stored in sanitizer.
Corrective Action(s): 1. Bleach sanitizer must be 200ppm. Operator indicated the bleach sanitizer was prepared 2-3 weeks ago. Bleach sanitizer must be monitored to ensure adequate chlorine sanitizer concentration and changed regularly to ensure the concentration is always at 200ppm. Operator corrected at time of inspection.

2. In-use wiping cloths shall be stored in sanitizer (e.g. the same bleach sanitizer found in the spray bottles) when not in use. Bacteria can grow in/on wiping cloths that are not stored in sanitizer. Alternatively, you may switch to using single-use/disposable paper towels instead of wiping cloths.

Observation: Handwashing sinks not adequately stocked for staff to wash hands.
Corrective Action(s): Front of house hand sink was missing liquid soap and the hand sink at the very back of the store was missing paper towels. Please make sure all hand sinks are stocked with liquid soap and paper towels in dispensers/holders at all times.

Observation: Fruit/drain flies found under the sink area in the back of the store.
Corrective Action(s): Please make sure to keep the area under the sink clean and dry to prevent attracting flies. Use sticky fly traps to help control flies that are currently present.

Premise is serviced by a licensed pest control company on a regular basis. Discussed with operator to also ensure the mouse caught on the glue trap (in the back behind the dry storage shelves) is removed as soon as possible.

General observations:
Coolers were 4 degrees Celsius or less, except as noted above.
Freezer was -18 degrees Celsius.
Hot holding unit was 60 degrees Celsius.
Cold and hot holding units equipped with thermometers.
Food storage and display practices are generally good.
Food handler hygiene appeared satisfactory.
Storage areas are generally organized.
All sinks equipped with hot and cold running water.
General sanitation was satisfactory.
Chemicals stored in a safe manner.
No signs of mice other than the one caught on the glue trap as noted above.
