Corrective Action(s): Correction order issued. As discussed, the fumehood must be cleaned, whether it is done by you or someone else. Food served to the public must always be protected from contamination. Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Prep cooler top is at 6.7 deg C. No potentially hazardous foods stored inside, just lemon slices and non potentially hazardous sauces. Corrective Action(s): Repair cooler to achieve 4 deg C or less at all times. Follow up inspection conducted: Dishwashing area sanitation has improved, there are still some areas behind the dishwasher and along the metal wall panels that need to be wiped down and sanitized. Correction order is issued. If upon follow up inspection the corrections haven't been made, further enforcement actions will occur.
