**Continue to work on regularly maintaining a higher level of sanitation throughout the premises.

- Woosung freezer compartment (above coolers): -10 deg C
- Unit has been cleaned and defrosted.
- Adjust unit. Unit must maintain temperature at or below -18 deg C.
- Do not overstock unit as overstocking limits cold air circulation.

- Operator advised that a new cooler has been ordered to replace single door undercounter cooler (under sushi bar). Cooler is scheduled to arrive next week.
- Ensure that new unit maintains temperature at or below 4 deg C.
- Ensure that new unit is equipped with an accurate thermometer.
