The following items have been observed:
-->No food is noted holding at room temperature
-->No potentially hazardous food is noted at room temperature
-->The stand up freezer at the back (it was blocked last time) is noted at -18oC
-->Foods are noted storing above ground
-->New flooring is in place to replace old chipped/cracked ones
-->Bleach sanitizer in bucket is noted at 200ppm
Still outstanding:
-->Facility appears to be more organized and operator has tried to remove unused items in the facility. Continue to remove unused items and items not required for this operation (ie. big plates, big pots, frying pans, other cooking equipment, etc).
Note:
Spoke with operator regarding sink concern in facility. Also reviewed menu with operator. Operator is currently offering 5 types of salads, 8 types of sandwiches, 3 types of soups (made from scratch), and 1 daily special. Daily special includes seafood & avocado, hot turkey with gravy, chicken breast with melted cheese, cooked roast beef with veggie on rice. Facility has 2 hot holding units, 1 domestic electric griddle, and 2 hot plates. No grease trap in facility.
Due to the size of the facility, and only 1 compartment sink is available in facility, facility needs to reduce menu. Starting now, operator can continue to offer salads, sandwiches, and 1 daily special, but facility must reduce soups to 2 only. Also, no raw protein is allowed to be prepared in facility. Facility must use pre-cooked protein from now on, or until facility can add additional sinks to the facility. Please remove raw protein from facility by December 17, 2021. |
