* Espresso machine located too close to the hand wash sink. Relocate espresso machine or provide a suitable splash-guard/barrier to prevent splashing. * Ensure all spray bottles of cleaners/sanitizers have supplier provided labels. In the interim, you may hand write the "names of the chemicals". Walk-in cooler at 4 degrees C or below. Walk-in freezer below -18 C. All preparation coolers/line coolers at 4 C or below. Quats sanitizer at the dispenser and in spray bottles tested 200 ppm. Dishwasher final rinse: 50 ppm chlorine. Hand wash stations supplied with liquid soap and paper towels. General sanitation is satisfactory. Temperature logs are up to date. Dry storage area clean and well organized.
