Observation (CORRECTED DURING INSPECTION): - Uncovered containers with cut vegetables in bottom cooler unit in prep area.
- Open plastic containter with brown sugar in dry storage room.
- Open container with gravy that was cooling int the walk-in cooler had air directly being blown from the cooler fans.
Corrective Action(s): - Ensure all food items are covered.
- Ensure food items that are being cooled (items that are cooling do not have to be covered to allow faster cooling) are stored on racks below the fan unit or in a way that air is not directly blowing onto food.

Observation: Gaps observed between the slide door and the floor at the back kitchen.
Corrective Action(s): Intall tight fitting doorsweep to prevent pest entry.

Observation: Metal wire brush being used to clean grill.
Corrective Action(s): Do not use metal brush to clean grill.

Observation: Water leaks/drippings observed from the pipings connected to dishwasher and the water heater expansion tank.
Corrective Action(s): Repair the pipings so there is no water leak. Manager on duty stated the dishwasher is soon to be replaced.

Comments

All handsinks are fully equipped.
All QUAT sanitizers in buckets tested at 200ppm with test strips.
High temperature dishwasher reached 71C with Thermolabel tester.
Glasswasher measured at 12.5ppm iodine with test strips.
All cooling units at 4C or below.
All freezer units ranging from -8C to -10C.
Vent grills are in sanitary condition.
ECOLAB visits every month for pest control. Follow recommendations from the company's report.

Note: Ensure the temperatures are recorded for cooling log at 2hr and 4hr mark.

COVID Prevention protocols:
- Covid Safety Plan in place.
- Plexiglass barrier installed at hostess station.
- Ensure 2m separation is in place between backs of chairs at adjacent tables - 1 table has to be moved further away from the adjacent booth or close that table.
- Covid signage posted at the entrance.
- Manager screens employee for signs & symptoms before their shift.
- Staggered staff breaks in place and no more than 1 person is allowed in the break room at a time.
- All employees wear masks.
