Upright, prep and milk coolers are all at 4 C or colder.
The upper inserts of the prep cooler are above 4 C but only used to store vegetables, pickles and items that do not require refrigeration.
Cheese and eggs are brought out in small volumes every 1-2 hours.
No hot holding during inspection. Reviewed procedures for hollandaise sauce - heated quickly and replenished frequently.
No pooling of eggs. Omelettes are made to order and eggs are scrambled just before cooking.
Chlorine - 100ppm detected. Use this (without detergent) for wiping clothes.
Procedures reviewed: wash, rinse, sanitize, and air dry.
Dishwasher has a 50ppm chlorine final sanitizing rinse - good.
**** Recommend a hand washing sink be installed in the front service area to facilitate hand washing for servers.
*** Floor in kitchen is becoming very worn.
