Observation: Faucet of prep. sink was observed to be taped and leaking water during use. A leak was observed at the faucet of the 3-compartment sink.
Corrective Action(s): Ensure the appropriate repairs are made to prevent a leak at the prep. sink and 3-compartment sink; Correct by July 31, 2023.

New similar sized faucets have been ordered for the prep. sink and 3-compartment sink according to the Operator, and expected time of arrival is within this month. Contact the Environmental Health Officer for a follow up inspection once the replacement faucets are installed. Ensure the replacement faucet is of appropriate size to reach all three units of the 3-compartment sinks to provide hot and cold running water.

Observation: Interior of ice machine had mould/mildew accumulation. Ice machine was last cleaned and sanitized approximately two weeks ago according to staff.
Correction: Immediately drain the ice machine. Clean, sanitize, and air dry the interior surfaces of the ice machine to remove the mould/mildew, and maintain the ice machine in a clean condition; Correct today. Staff agreed to cleaning and sanitizing the ice machine today and she informed they would clean and sanitize the inside of the ice machine on a minimal weekly basis in the future as well.

Observation: 1. Black buildup of debris and mould was observed inside the ice machine.
2. Food residues were present on the blades of a tomato slicer.
Correction: 1. Drain the ice and clean and sanitize the interior of the ice machine in accordance with the manufacturer's cleaning directions to remove the buildup and maintain it in a clean condition.
2. Disassemble the tomato slicer and wash, rinse, sanitize, and air dry the blades to maintain it in a clean condition.
Correct today and prior to reuse.

Observation: Buildup of black debris/mould was still evident inside the ice machine. Staff informed that they have drained it today and would clean and sanitize it today to maintain it in a clean condition.
Correction: Drain the ice and clean and sanitize the interior of the ice machine in accordance with the manufacturer's cleaning directions to remove the build-up and maintain it in a clean condition; Correct today & prior to reuse for ice production.

Follow up inspection:
-Ice machine had been drained, cleaned, sanitized to remove mildew/mould/debris.
-Ice machine was observed to be in a clean condition at the time of inspection.
-Ice scoops were stored in a secure manner to prevent the handle from contacting the ice.

Ensure to drain the ice, clean, sanitize, and air dry the ice machine in accordance with manufacturer's cleaning directions on a regular basis (e.g. weekly and as needed basis) to maintain the ice machine in a clean condition and protect the ice product from any potential contamination (e.g. mould).
