Observation: Buns stored on the floor in front of the walk-in cooler. Most bottom crate is stored with buns.
Corrective Action(s): Ensure to have staff leave the most bottom crate empty to allow for 6 inches clearance of food storage off the floor.

Observation: Plywood used to elevate shelf underneath poutine prep table has mould growth as there are water pooling on the floor.
Corrective Action(s): Please replace the plywood with a washable, durable material to elevate the shelf.

Observation: Cracked floor tile noted in front of mop sink, pooling of mop water noted in this area where fruit flies are still present.
Corrective Action(s): Please replace the floor tile and ensure cleaning and drying underneath the cracked tiles are done prior to replacing new tiles.

Adequate handwashing stations not available for employees [s. 21(4)] (Water in handwash station of women's washroom is inadequate as only a thin stream of water is dispensed.)
Comments

Adequate stream of water available in the women's washroom.
Handsoap dispenser is secured in main kitchen handwashing station.
Cleaning in the front ice cream station and under fryer station has improved. Please pay attention to flooring under ice cream machine.
Ice machine cleaned at time of inspection.
Fruit flies in the main kitchen, front retail area and stairs have reduced. However, significant amount of fruit flies are still present in the back mop sink area and back door where recycling is collected.
->A deep clean on the walls, floors and shelving area must be done to reduce fruit flies in the two problematic areas. Use 100ppm bleach.
No opened cans of food noted in the walk-in cooler.
->The compressor is still frozen causing water dripping in the walk-in cooler. Repair has been ordered, ensure temperature of the walk-in cooler remains under 4C after repair is complete.
->Leaking under poutine is also scheduled to be repaired. Reduce pooling of water here.
