306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
General sanitation level is good, however the floor under shelving racks/platforms in the kitchen have accumulated food debris. The lowest shelf/platform shall be at least 6" off the floor so a broom/mop can clean under it.
Corrective Action(s):
Wash the floor under all shelving racks/platforms to remove the food debris, ensure this is done daily. It is recommended that the lowest shelf on the racks be raised higher to allow easy cleaning of the floor underneath.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
Found a cover, over a piece of unused cooking equipment, made of cardboard covered with aluminum foil. Staff explained that they replace the cover every week. The cover had food and grease accumulated on it. The cover is not cleanable and made of a material that is not durable and shall only be used once.
Corrective Action(s):
The cover shall be discarded at the end of each night and a new one placed over it. It is recommended that a stainless steel cover be installed, or remove the unused piece of equipment as it will expose the stainless steel table underneath it (which is cleanable).

Observation:
The wall by the meat slicer has dents and scrapes. The wall is no longer smooth, sealed, and cleanable. This will attract pests.
Corrective Action(s):
Repair the wall so that it is made of a material that is durable, smooth, level, sealed, cleanable, and impervious to water. The owner informed me that they are in the process of installing MFP board (China board) on the wall as they are aware of it being damaged.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers were 4C or colder; freezers were -20C or colder; hot holding unit was above 60C; thermometers present; and temperatures recorded daily.
- Low temperature dishwasher had [Cl2] of 50ppm during the rinse cycle. Test strips present and done daily.
- Hand sinks stocked with running hot and cold water, liquid soap, and paper towels.
- Spray sanitizer bottles had [Cl2] of 100ppm. Ensure a fresh solution is made every day, throw away yesterday's solution. Add 1/2 tsp. bleach and fill spray bottle with warm water.
- Food storage practices done correctly. All food stored in food grade containers; covered; labeled; date coded; separate from non-food items (cleaners or stationary); in groups to prevent contamination (raw on lowest shelves; raw separate from RTE foods); and 6" off the floor on shelves/platforms.
- Food handling practices done correctly.
- FoodSafe certified staff present.
- Stock rotation done correctly. FIFO rule followed. No expired foods in use.
- General sanitation is good. Improvement needed in the mentioned areas.
- No signs of pests.
